Dennis’ Shepherd’s Pie
A quick and easy dish that your entire family will love. Make it even easier by using purchased mashed or instant potatoes. Add some veggies and you have a healthy meal.
In a large skillet, brown the ground beef. Drain any excess grease and add garlic powder and stir.
Add Dennis’ Black Bean & Corn salsa to the mixture and cook uncovered for 10 minutes.
Remove from heat. Spread the meat mixture in an even layer in a 9×13 dish. Allow the mixture to rest for 20 minutes before continuing.
While the beef mixture is resting, boil the potatoes in water until fork tender and then drain the water.
Add the butter, sour cream, milk, salt, and pepper to taste.
Mash the potatoes with a hand masher or mixer until you reach your favorite mashed potato consistency.
Top the meat with the mashed potatoes. Scrape potatoes with a fork or make swirls on top (this will look fantastic after the potatoes are browned).
Place the dish in the oven and bake at 350 degrees F for 15 minutes until brown and bubbly. (After baking, you can place the dish under the broiler for a few minutes to brown the potatoes more, if desired.)
Optional: sprinkle shredded cheddar cheese on top and bake for another 5-7 minutes. Then garnish with parsley.
