Dennis’ Shepherd’s Pie

A quick and easy dish that your entire family will love. Make it even easier by using purchased mashed or instant potatoes. Add some veggies and you have a healthy meal.

Ingredients

2 lbs ground beef
1 tbsp garlic powder
16 fl oz Dennis’ Black Bean & Corn Salsa
2 lbs potatoes, peeled and cut into big chunks
4 tsp butter (1/2 a stick)
¼ cup cup sour cream
¼ cup milk (more to suit your taste)
Salt & Pepper to taste

Directions

In a large skillet, brown the ground beef. Drain any excess grease and add garlic powder and stir.

Add Dennis’ Black Bean & Corn salsa to the mixture and cook uncovered for 10 minutes.

Remove from heat. Spread the meat mixture in an even layer in a 9×13 dish. Allow the mixture to rest for 20 minutes before continuing.

While the beef mixture is resting, boil the potatoes in water until fork tender and then drain the water.

Add the butter, sour cream, milk, salt, and pepper to taste.

Mash the potatoes with a hand masher or mixer until you reach your favorite mashed potato consistency.

Top the meat with the mashed potatoes. Scrape potatoes with a fork or make swirls on top (this will look fantastic after the potatoes are browned).

Place the dish in the oven and bake at 350 degrees F for 15 minutes until brown and bubbly. (After baking, you can place the dish under the broiler for a few minutes to brown the potatoes more, if desired.)

Optional: sprinkle shredded cheddar cheese on top and bake for another 5-7 minutes. Then garnish with parsley.

Baked Brie with Cranberry Relish

Easy to make and a must for the holiday season!

Ingredients

1 Wheel Brie Cheese
½ cup Dennis’ Cranberry Relish
2 tbsp chopped almonds (optional)If you're not nuts about nuts you can leave these out, otherwise – go nuts!
1 Box of your favorite crackers

Directions

Heat the oven to 325 degrees

Turn on the oven

Place cheese wheel on a festive oven-safe dish.

Bake 10 to 15 minutes or until softened.

Spoon Dennis’ Cranberry Relish over cheese and sprinkle with almonds (remember – only if you’re nuts about nuts)

Bake about 5 minutes longer.

Serve with crackers.

Cranberry Glazed Turkey Breast

Cranberry Glazed Turkey Breast

Ingredients

1 Jar Dennis’ Cranberry Relish
cup Frozen Apple Juice Concentrate (thawed)
2 tbsp butter
1 Turkey Breast

Directions

In a small saucepan, bring Dennis’ Cranberry Relish, apple juice concentrate, and butter to a boil. Remove from the heat; cool.

Carefully loosen the skin of the turkey breast. Use 1/2 cup of Dennis’ Cranberry Relish and rub on top and under the skin. Set aside 1/4 cup of Cranberry Relish to baste the turkey during roasting.

Place turkey in a shallow roasting pan on a lower rack. Bake, uncovered, at 1-1/2 to 2 hours or until a thermometer reads 165°, basting occasionally with reserved sauce. Cover and let stand for 15 minutes before carving. Warm reserved 3/4 cup sauce; serve with turkey.

Cranberry Brie Bites

Sooooo good! We make this every Thanksgiving morning!

Ingredients

1 Tube Crescent Dough
8 oz Brie Cheese
½ cup Chopped Pecans
3 Sprigs fresh rosemary, rough chopped

Directions

Preheat oven to 375° and grease a mini muffin tin with cooking spray.

On a lightly floured surface, roll out crescent dough, and pinch seams together.

Cut into 24 squares and place them into muffin tin slots.

Cut brie into small cubes, no more than 1/2″ in size, and place inside the crescent dough.

Top with a spoonful of Dennis’ Cranberry Relish, a few chopped pecans, and a pinch of rosemary.

Bake until the crescent dough is golden brown, about 15 minutes.

Serve immediately.

Cranberry Relish and Cream Cheese Appetizer

Ingredients

2 Bricks of cream cheese, softened
cup Green onions, thin sliced
1 Lime – cut into wedges
1 Box Club Crackers
1 Box Townhouse Crackers

Directions

Place softened cream cheese and sliced green onions into a bowl and combine thoroughly.

Spread the cream cheese onto a large serving plate and form it into an 8-inch circle. Use an icing spatula to make an even layer.

Add the jar of Dennis’ Cranberry Relish and spread evenly over the cream cheese circle.

Lay the lime wedge on the edges of the mixture.

Arrange the crackers around the circle.

Serve immediately.

Baked Salmon with Mango Salsa

Ingredients

2 lbs Salmon, cut into 6 fillets – Leave the skin on! It protects the fish while cooking.
1 cup Dennis’ Mango Gourmet Salsa
Salt and Pepper

Directions

Preheat oven to 425 degrees

Season salmon fillets with salt and pepper.

Place salmon on a non-stick baking sheet or pan, skin side down.

Start checking the fillets after about 6-7 minutes. You can check one of two ways:

1. Insert the tines of a fork into a fillet and touch it to your lips. If it’s hot, the fish is done.
2. Using a fork, separate one of the flakes near the center of the fillet enough to see if it’s opaque in color. If it is, it’s done.

The filets will most probably be done in 8-10 minutes

Place the fillets on a serving plate and top each with a generous portion of Dennis’ Mango Gourmet Salsa.

Serve immediately. Enjoy!

Fiery Red Beefy Queso Dip

Ingredients

16 oz Velveeta Cheese – original flavor
1 lb Lean Ground Beef

Directions

Cut the Velveeta into ½” cubes and place in a microwave-safe bowl.

Brown the ground beef and completely drain all fat.

Add to the bowl with the Velveeta.

Stir in the jar of Dennis’ Fiery Red Gourmet Salsa.

Microwave on high for 2 – 4 minutes, stirring frequently to ensure all the cheese is melted. Monitor it closely to ensure the mixture doesn’t burn.

Serve while hot with tortilla or pita chips.

Hummus with Dennis’ Black Bean and Corn Gourmet Salsa

Hummus with Dennis’ Black Bean and Corn Gourmet Salsa

Ingredients

½ tbsp Garlic powder 2 tbsp Olive Oil 1 cup Dennis’ Black Bean & Corn Salsa
31 oz Chickpeas (usually (2) 15.5 oz cans), drained, with liquid reserved
1 ½ tsp Kosher salt
cup Tahini
¼ cup Fresh lemon juice
¼ cup Liquid reserved from the chickpeas
2 tbsp Olive Oil

Directions

Remove the skins from the chickpeas. We’re not going to lie, this is as tedious as mowing your lawn with scissors but it’s mandatory if you want a smooth hummus – trust us on this one…

Using a food processor fitted with the steel blade, add all ingredients EXCEPT for Dennis’ Black Bean and Corn Gourmet Salsa.

Process on high until smooth. Add the reserved chickpea liquid as necessary, 1 tablespoon at a time, to make the hummus smooth.

Season the hummus to taste with salt and pepper (preferably white pepper)

Place hummus in a serving dish and with a icing spatula or knife, smooth the top of it evenly.

Make a shallow round depression in the center of the hummus and mound Dennis’ Black Bean and Corn Gourmet Salsa in it. Make it pretty.

Serve chilled or at room temperature with raw veggies, crackers, or pita chips.

Crockpot Salsa Chicken

2 lbs Chicken ThighsYou can use breasts or leg quarters as well
Salt & Pepper
Your favorite toppingsIf you decide to make tacos with the chicken, choosing the right toppings will be crucial to avoid ending up sleeping on the couch…

Directions

Season the chicken with salt and pepper

Place the chicken in the crockpot and pour 1 jar of Dennis’ Gourmet Salsa on top of it.

Cover and cook on low until the chicken pulls apart easily with forks. Approx. 3-4 hours.

Take the chicken out of the crockpot and shred it using two forks. Place the shredded chicken back into the crockpot and mix thoroughly with the salsa.

There are many choices for serving the chicken. You can place it over rice or a baked potato.

Our favorite is to put it on a warm tortilla, top it with tomato, and touch of diced onion, and lime crema. Feel free to choose whatever your favorite toppings.

Citrus Fire Dip

Perfect as a dip for veggies, or use it as a tartar sauce.

Ingredients

cup Fat Free Sour CreamFor a slighty thicker consistency, you could substitute Fat Free Plain Greek Yogurt
cup Fat Free Mayonnaise Feel free to use light or full fat mayo if you prefer the flavor to fat free
1 tsp Worcestershire Sauce
1 pinch salt

Directions

Combine all ingredients in a mixing bowl and whisk until well blended and smooth

Chill for at least two hours before serving

Serve with raw veggies or crackers
